Azeitao portugal this concentrated round of sheep's milk cheese is very earthy, tangy and creamy. the pastures where the sheep of azeitao graze are lush and covered in herbaceous scrub which gives the milk its characteristic flavor. the texture ranges from soft and unctuous to firm and chewy      
Cheddar, le Chevre Noir canada this luscious six-month old cheddar is nutty and buttery with hints of caramel      
Palmero, D.o spain artisanally made, this hard goat's milk cheese comes from la palma, part of the canary islands off the coast of spain. hard and mellow with a distinct goaty finish      
Robiola Fia italy this raw goat's milk cheese is allowed to age for at least 30 days before it makes its journey to manhattan. the exterior imparts an earthy flavor and prevents the luscious white paste from cracking as it ages. the texture is slightly granular and chalky      
Epoisses france a classic french cheese from the area of burgundy. this cheese has a sticky orange exterior that hides the soft and buttery, sweet and salty interior
