Flip might be the closest burger experience yet to Kramer’s make-your-own-pizza concept. The blond-wood café on Bloomingdale’s lower level (right across from Helmut Lang’s men’s collection) allows its customers to micromanage their burgers down to the Pat La Frieda beef blend—a choice of short rib, brisket, or an unspecified cut of Wagyu ($12 to $15). You pick your sauce, your cheese, and your additional cholesterol boosters (fried egg, Canadian bacon, regular bacon, or chili). Of course, the tab can add up quickly, as toppings and cheese cost extra. There’s a full bar and Max and Mina’s ice cream, too.
