It’s not easy being green, but Argentinean owner Alberto Gonzalez has managed to make his stylish chain concept into New York’s first USDA-certified organic restaurant. Not to be confused with the sleek Italian Gusto on Greenwich Avenue, this cafeteria-by-day and bistro by night evokes a South American eco-lodge. Wood for the rough-hewn tables was recovered from defunct barns, and leather-encased lights (made from “cows that were already dead”) hang in coconut formations from the sky-lit ceiling. Gusto also uses wind-power; the soy ink–printed menu is made with recycled paper (as is the TP), and takeout utensils are forged out of corn. Robust south-of-the-border-inspired dishes hold up to the contemplative surroundings. Steak sandwiches emphasize smoky filet mignon; thin-crust pizzas bubble with mozzarella and tangy tomato sauce; and fresh-baked breads range from plump empanadas to alfajores, flaky biscuits smeared with dulce de leche. Candles and ambient music ease the transition into a cozy restaurant come sundown.

I had dinner with my best friend & our moms last Saturday night & we were pleasantly surprised to order cocktails made with organic liquor. They were probably too light on the alcohol for most drinkers, but we're total lightweights, so we enjoyed the fruitiness. The stuffing in the meat empanada was strangely sweet. 2 orders of fillet mignon (1 incorrectly arrived as the strip steak which was not chewable as ordered well done, but it was corrected) were good, my rare strip steak was difficult to chew but I should have expected that, the flavor was fine. The beef stew, again, was a bit sweet. The sides, mash potatoes, very creamy and sweet was quite delicious, the broccoli & spinach were good. Desserts, the flan, the tortita and alfajores were delicious. The service is still shaky (they forgot our salads) but it's awesome to have an all organic place to eat & drink, it's a good start!

The fresh fruit drinks were yummy. Our meal included two salads, containing lovley fresh arugala. The balsamic and the lemon dressings were delicious. The cheese was pre-grated, hard and bland. While the tofu they've chosen is excellent, it was grilled plain; marinading it would have been nice. The decor is simple, though well done. The wait staff was nice and attentive. The experience was good, though the food and portions weren't inspiring, particularly at this price point. They have a liquor license now.
