Healthy Nibbles owner Mary Walker—a longtime Prospect Heights resident and Park Slope Food Coop member—was walking along Flatbush Avenue with her son one day when she had a culinary epiphany: “I was looking for a healthy snack in the neighborhood, and I realized all we had were bodegas,” she says. The owner of an art-and-framing store on the corner of Flatbush and Prospect Place since 1998, Walker decided to divide her shop in two and devote half to an organic lounge and juice bar. Healthy Nibbles offers nutritious soups, salads, sandwiches, and assorted other goodies in a relaxed, no-frills setting—with counter service, brightly colored walls, a few pieces of comfortable thrift store furniture, and a few bar-height tables and chairs. The homemade tofu-curry salad packs a flavorful punch, as do all the made-to-order juices (especially those with ginger.) While organic, vegan, and vegetarian fare take center stage, Walker’s no purist. There are turkey (organic) and salmon (non-organic) burgers and Jamaican-style (organic) chicken patties, too. Richly thick shakes are made with dairy-free (if non-organic) ice cream and peanut butter. Walker sources other cookies and desserts from the all-natural brands Erica’s and Purity.
