Clinton’s Hill’s Mariam is the kid sister to the perennially popular Salimata in Harlem. While Mariam’s echo-y dining room has a slightly antiseptic feel—white walls, linoleum tables—the fiery fare is anything but ho-hum. West African cuisine is known for its heat, so beware the orange African hot pepper, which garnishes many of the dishes. For relief, there’s Mariam’s homemade crushed-ginger juice, which leaves the tongue tingling. One of the chefs hails from Guinea, and so do the more memorable sides, like starchy ackee, gelatinized granules made from fermented cassava; it tastes like springier couscous. In the African tradition, meats and fish arrive with plenty of identifying parts intact: The braised tilapia is served whole, complete with gaping mouth, hollow eye sockets, and feathery tail. Negotiating its many (many) little bones can be a laborious process, but the palm-oil-brushed flesh is that much more savory when sucked off the skeleton.
