Aged Sake, or Koshu, Is a Long Lost Style Enjoying a Renaissance in japan. koshu Was Once Enjoyed by the Royalty and Elite of the 13th Century Kamakura era. however, Aged Sake Fell Out of Favor During the 19th Century Edo era, When a Heavy Tax Was Levied on brewers. This Tax Stifled Interest in Crafting This Luxurious Sake For generations, and Was Lifted Only Fifty Years ago. Most sake Is Meant to Be Consumed young, Generally Within a Year of release.
