Claims of ecosuperiority can make this nascent franchise — or “zero-emission Neapolitan pizzeria,” as corporate propaganda has it — seem like an ad for backer T. Boone Pickens, whose natural-gas empire powers its fleet of food trucks. But it’s hard to quibble with the quality of the individual-size pies, each cooked in under 90 seconds in (here we go again!) “the only open-mouth electric oven built in Italy.” Forcella founder Giulio Adriani has trained the crew to carefully stretch the dough, apply the San Marzano tomatoes and fresh mozzarella, and achieve a crisp and airy crust. Go for the A Diavolo, dotted with jalapeños and soppressata and drizzled with Mike’s Hot Honey.
