Oga is among the first New York restaurants to explicitly bring the Spanish concept of tapas to Japanese cuisine. Head chef and successful Boston restaurateur Toru Oga uses mushrooms, fish broths, tofus, and even cheeses in an attempt to fuse Chinese, Italian, and American cuisine with the Japanese standbys of sushi, Kobe beef, and seafood. His tapas and various styles of maki sushi provide small portions of tantalizing flavors in often-successful combinations, but the deftly made traditional maki outshines many of the more innovative dishes. Still, the place is packed with Japanese businesspeople, so the chef is doing something right. Some of the oddball tapas can be more challenging than satisfying, like the chawan-mushi: steamed soy custard with seafood, shiitake mushrooms, and mozzarella. Others, like a soothing unagi agedashi;basically an eel egg roll wrapped around more eel and mozzarella, in an intriguingly spicy fish broth;are perfectly executed. Cold roast duck, a fatty, updated version of do-it-yourself mushu duck, is just right, and enhanced with hoisin sauce. The interior is as expressive as the food, with a long, white foyer that opens to a sushi bar accented with fresh flowers, then into a bright dining area with a glass ceiling draped in white sheets, like a giant tent.


There are some winners among the innovative maki offerings, too, like BLT maki (exactly what it sounds like) and a spicy tuna tostado (under the “special maki” section).
