A finance-industry vet brings a Polish-style beer hall to Williamsburg in the form of Old Rooster. The 70-person backyard with a deck and tables cut to accommodate the trees will be partly covered, but the equally sized interior should also be a draw during good weather and bad, thanks to thick, handmade wooden tables and exposed stone archways and walls.
