The hunt for authentic Georgian cuisine in New York rarely leads to a purely Georgian meal. It does, however, invariably lead to South Brooklyn, where Russian, Ukranian and Central Asian immigrants frequent a handful of restaurants serving Georgian fare with a Russian flair. Pirosmani—a makeshift banquet hall with Russian-print menus and an atmosphere that shifts between desolate, intimate and raucous based on who shows up to supper—provides some of the city’s best Georgian cooking. Though the house’s Saturday evening banquet requires an early reservation and a $45-per-head minimum for parties of ten or more, Friday and Sunday evenings offer the same performance of karaoke and spur-of-the-moment dance breaks for a much smaller tab. In support of good spirits, the house encourages guests to bring alcohol of all kinds without charging for corkage. Most of Pirosmani’s menu captures the hearty, home-style cooking of Georgian immigrants, but the restaurant particularly excels at baking. Crunchy, savory batons of shotis puri (Georgia’s tandoor-baked answer to the French baguette) are essential, as is adjarian khachapuri—a boat of bread filled with melted cheese and topped with a raw egg and a stick of butter. Chanakhi, a lamb, tomato and vegetable stew, is crowned by a cap of fluffy white bread. And by the time chkmeruli—a clay pot filled with sizzling butter, garlic and a roasted Cornish game hen—hits the table, at least one bottle of vodka should be looking for a replacement.
