Chef Roberto Hanechak has earned his culinary stripes in the Nobu and Bouley kitchens, and now he’s out to prove that he can have a little fun, too. Plan B, the Nolita tapas spot that is dressed in horsehide banquettes, rustically funky décor, and lots of dark wood, has a menu that’s more exciting than most. The crispy, baconlike chicharron tuiles (fried pork skin) with garlic aïoli and a cilantro cracker comes simply prepared with olive oil and salt, and it’s wildly successful, taking ordinary flavors and upping the ante just a bit with perfectly balanced seasoning. Pork and serrano sandwiches are topped with Swiss cheese and a sliced pickle, and they’re both comforting and satisfying. Small rabbit meatballs soaking in a savory demi-glace make for a heartier meal. Less exciting are the greasy fried pig’s ears, bland olive-oil-poached halibut, and dense duck neck, but strong cocktails like the tequila-laden blancas de la sangre caliente will wash those flat tastes right away.Recommended Dishes
