Better still, suspend your design radar and dial up your appetite, for huge portions of south-of-the-border fare smothered in carefully cooked sauces, like a sharp guajillo that spikes simple pork tacos garnished with onion, cilantro, and a drizzle of lime. Otherwise, dry tamales are restored by a fiery chipotle, and potent, multi-layered mole enlivens chicken stew.
