| Injera made up of teff, it is the tiniest cereal in the world. teff is origi nated in ethiopia between 4000 bce and 1000 bce. teff is high in protein. this grain also has a very high calcium content, and contains high levels of phosphorus, iron, copper, aluminum, barium, and thiamin. it is ground fine, and fermented over three days. the fermented batter then is spread on a hot plate where it gets its unique pocked surface, imprints of a million bubbles that have escaped the heat of the hot plate. the pours are essential in absorbing and holding the sauce. to eat: tear off a piece of injera, scoop up a sauce and roll into a mouthful with just the fingers on one hand. after the sauce is consumed, the juicy injera lining the tray is eaten | ||||
