The view inside of Restaurant Ichimura is obscured by the frosted-glass façade, so when you enter, you feel like you're being let in on a secret. In some sense, you are: This is not one of the five or so sushi bars that again and again top "best sushi" lists, yet Eiji Ichimura's exquisite plates of precisely sliced fish on top of warm, tangy, vinegared rice suggest it deserves to be mentioned in the same breath as Kuruma Zushi and Sushi Yasuda. A green shiso leaf shows through translucent slices of delicately flavored fluke, pale-pink tuna belly is exhilaratingly fatty, and house-made tamago (egg custard) is subtly sweet and faintly runny. Sushi is clearly the focus, though there is a small assortment of well-prepared appetizers, such as earthy, shredded burdock root cooked in sweetened soy sauce and monkfish liver with tart jellied ponzu, and multi-course-meal choices. The almost excessively minimalist décor—the long wood bar and woven chairs are the only relief from the Spartan, all-white interior—is an indication that Chef Ichimura means for nothing to distract from his food.

Recommended Dishes

Burdock sautéed in sweet soy, $6; anago, $7; orange clam, $6; deluxe sushi combination, $35
