Chef Matt Rojas (previously of Eleven Madison Park) does French-Asian fusion in this spot decked out to look like forties French Colonial Saigon. The menu changes monthly, but expect Vietnamese flavors to dominate the starters, like an imposing whole rouget (mullet) that sits in a pool of robust lime and chile sauce, or a tower of whole prawns served with fragrant papaya salad. The entrées and desserts tend to be more of a cultural mash-up: Mustard-marinated lamb ribs are succulent and served with Malaysian-inspired roti.
