While April Bloomfield’s burger cookery at the Spotted Pig and at the Breslin has a whiff of the exotic, the British chef’s Salvation Burger menu at the Pod51 hotel is a deep dive into all-American fast food: Fried fruit pies. Fish sandwiches. Boozy milkshakes. Special sauce. Hot dogs, burgers, and fries. Not that "fast food" really covers it when practically everything, from the mustard to the potato buns, is made from scratch. And the chef, who’s finally beginning to be known as much for her way with vegetables as with burgers and offal, might be summing things up with her beet-and-rice-vermicelli veggie burger: It’s inspired by the Korean dish soondae, a blood sausage that’s typically made by stuffing pig’s intestines with cellophane noodles.

The kitchen closes at midnight.
