After fourteen years in Boerum Hill, chef Saul Bolton has moved his eponymous, Michelin-starred restaurant to the Brooklyn Museum. The handsome dining room, which seats 87, features floor-to-ceiling windows that allow diners to peek into the Great Hall and abstract murals by Paul Kelpe adorning the walls. Inspired by the move, Bolton has upgraded the menu, holding on to a few old favorites (dry-aged squab with bulgur, roasted carrots, and spiced yogurt; Bolton’s famous baked Alaska), along with offering new additions. The entrée menu is seafood-heavy, including monkfish and scallops, but Bolton really succeeds with the meatier entrees. The Crystal Valley chicken, served over a bed of cauliflower and arugula, has a deliciously crispy skin that falls away from the interior with ease, cloaking a juicy, tender piece of white meat. The duo of Creekstone beef, cut into four and served drizzled in a red wine sauce, is the most expensive thing on the menu at $34 dollars. It impresses, but you’ll want more, both because it’s delightful and diminutive. If you’re having trouble deciding, a three-course prix fixe dinner is also available for $40.
