With the recruitment of two well-connected new partners and a subtle reworking of the menu and décor, the Vietnamese restaurant formerly known as Vicala has become Sen. But Chris Andrews and Chris Johnson, veterans of hot spots like Canteen, BondSt, and Thom, come bearing more than overstuffed Rolodexes. They've enlisted former Jean Georges pastry chef Eric Hubert to consult on the sampler-style dessert list and added a late-night menu to draw in all their restaurant-industry friends. Chef-owner Michael Huynh has revitalized the menu, too, adding dishes like yam soup with tiger shrimp, lobster-and-lotus-"rootlet" salad, and king prawns with tofu and bouillabaisse reduction.
