Sindicato de Cocineros peddles upscale Mexican in a cozy space from the owners of next-door Lokal. The yellow adobe walls are adorned with large floral panels, and the antique tin ceiling lends a cozy vibe. Shareable starters like house guacamole and refreshing fluke ceviche come with tortilla chips, while the mollete piles chorizo and chihuahua cheese come on a savory bolillo baguette. Standouts among the not-so-small platos pequeños are egg-topped chilaquiles and enchiladas reminiscent of lasagna, with braised lamb shoulder and corn tortillas layered with melted asadero cheese and black bean purée. Baja-style bass fish tacos come three to a platter, with pineapple and pickled shallots on small homemade tortillas. The meatier platos principals are complete dishes, like the lechon braseado—braised pork shoulder beside a pool of pipian sauce in a scooped out heap of smooth black bean purée and a side of rice. Traditional flan makes for the perfectly light finish.
