The cuisine of Trinidad and Tobago is a multifaceted mélange reflecting its Caribbean, African, European, and Asian heritage. Lively Flamingo Tropicale highlights the culinary contributions of the republic’s Chinese and South Asian communities, with a smattering of dishes that evoke the Indian subcontinent. The dining room has a rustic, tropical feel with blond-wood paneling and flooring, palm-frond-emblazed tabletops, and wooden chairs. Wall mirrors and hanging, conical, crystal chandeliers add flash. The clientele is strictly local, of the Trinibagonian community, who lead with starters such as great shrimp wontons, delicately fried and served with chile-pepper sauce, soy sauce, and ketchup. Patrons mix the three in equal parts to create a vibrant, quirky dipping sauce. Curry duck bathes succulent chunks of the meat in mildly piquant brown gravy. The accompanying dhal puri, a flatbread filled with crushed yellow lentils, is a super sopper-upper. With its distinctive island renditions, the Flamingo Tropicale makes familiar ethnic foods seem exciting again.
