Given the low-key ambience at Valdino West—fresh flowers in the front window, a cozy little bar nestled in the back—you’d be forgiven for thinking it a family-run survivor of the West Village’s hazy, swinging sixties. The generous portions and often-traditional menu would seem to bear out the theory, as does the customer-pleasing takeout and delivery. But Valdino’s fare is fresher and more sophisticated than appearances suggest. The seductive interior, with strands of fairy lights and boudoir-pillow-lined banquettes, complements a menu rich in both traditional Italian fare and welcome innovations on the old forms. Truffle oil is a refrain here, modernizing dishes like onvoltini di bresaola, bresaola rolled around sharp arugula and nutty-rich parmesan. The kitchen’s clear devotion to only the freshest ingredients is evident in the simple, flavor-packed farfalle crudaiola, bow-tie pasta dotted with capers, olives, tomato, mozzarella and basil.
