Sagrantino (r) dark and intense varietal from umbria. some extremely interesting wines come from this grape      
Sangiovese (r) high acid, firm tannins, spice, cherry, cedar, mushroom, tar. best can age 25+ years      
Sauvignon (w) lemon, lime, grapefruit, hay and straw      
Sparkling (w) winemakers use many different varietals including chardonnay, pinot blanc, and pinot noir. franciacorta is italy’s premier sparkling zone      
Sylvaner (w) steely, minerally, and petrol-scented      
Syrah (r) huge potential in italy. full bodied with smoked meat, dark black cherry, and black pepper      
Teroldego (r) crisp, medium bodied refreshing fruit driven red from the veneto. very exciting varietal      
Tocai Friulano (w) similar to sauvignon with lemon, lime, mineral, herbs, and yeast      
Trebbiano (w) crisp, refreshing with almond and stone. used in france to make cognac
