It's not just the rabbi in the house that separates Viva from other pizzerias. Along with the pies, there's also a broad selection of pastas, wraps, salads, and fresh fruit smoothies. And there's not a pepperoni in sight—soy chicken and sausage sub-in instead. The health-obsessed will appreciate the choice of unbleached white flour, whole wheat, cornmeal, or spelt crusts, crispy enough to stand up firmly to the toppings, except in the case of the twice-baked ziti slice, where the pasta can't help but weigh the wedge down. Vegans have options galore, from an all-green pizza with pesto, peppers, broccoli, zucchini, and spinach to the Zen Antioxidant pizza, with green tea tofu, pesto, shiitake mushrooms, caramelized onions, garlic, and sundried tomatoes. And while most of the ingredients are organic, absolutely everything is kosher. Viva’s especially hopping during weekday lunch, when workers in the garment trade line up outside the take-out window, file along the bar, or sit at the plastic-topped tables in the back. All are comforted knowing that each wholesome—and blessed—bite is good for the body and soul.
