Check the calendar before you head to the ‘burg to satisfy your ramen craving: Yuji is a pop-up inside Kinfolk Studios that operates only Thursday through Saturday nights (the rest of the week, the space becomes Nordic spot Frej). The specialty here is a Tokyo cult-favorite style of ramen, mazemen, served without broth—but there’s no shortage when it comes to flavor. Rather, exceptionally glossy and springy noodles are coated in a concentrated sauce made from sesame oil and the flavorful soy-sauce-seaweed seasoning called tare. Add miso and uni to this, and you’ll get a bowl with Alfredo-like richness, tempered by strips of shiso leaf. Other options rove from crab to bacon and eggs, with most coming in under ten bucks. Changing starters were less successful than noodles on a recent visit. Buns filled with pulled pork would’ve tasted better with fatty belly, and green-onion-studded potato salad proved ho-hum. The exception was a playful dish of warm egg yolk with chilled lobster and spinach. On weekends, the front of the garagelike, airy, bi-level space becomes a D.J.ed dance party, all the more festive when large roll-up doors are open to the warm night.Recommended Dishes
