Bergen Bagels has a strategic advantage on their breakfast-on-the-go competition in Brooklyn. And though the accolades pasted all around the place can't hurt, the real draw for the near-constant flow of customers is in the rolled dough: a dozen flavors of home-baked bagels that hit the right balance of chewy and soft. The spreads include several tofu and light varieties; smoked fish options extend beyond the usual whitefish and lox to a fresh, smoky sable—a better eye-opener than that second cup of coffee.
