As the name (French for "sweet jewels") suggests, pastry chef Ellen Baumwoll’s cakes are precious, intricate and almost a shame to slice into—until that first bite of hazelnut-almond wins you over. Best known for her stylish wedding cakes, she also applies her high standards and elegant, neo-Victorian sensibility to her pastries, petit fours, brownies and cupcakes. Her custom-designed cakes have recreated grandfather clocks, cans of Diet Coke, and anniversary photographs with startling accuracy, while her more classic varieties stand as three-dimensional Valentines, garnished with candied flowers or precisely drawn flourishes. These edible art pieces can be covered in marzipan, fondant, rolled chocolate, ganache or buttercream, with such fillings as light lemon curd and white chocolate truffle.
