The official name may be Cassinelli Food Products, but the awning tells the real story: Cassinelli Pasta. This small, thriving, post-World War II factory, which largely sells its goods wholesale, but has a small shop counter up front, honors traditional notions of noodles. Plain, egg and spinach varieties, in shapes including linguini and shells, are offered fresh or frozen; stuffed pasta—like ravioli, tortellini and cappelletti (“little hats”)—envelop mild nuggets of ground meat or ricotta cheese, plain or with mushrooms. Prices are retail, but hours are factory-style: early.
