Pierre Marcolini is a chef not easily satisfied by a victory. After winning the Coupe du Monde de la Pâtisserie (the grand slam of pastries), the Belgian confectionaire simply set his sites on a different dessert: chocolate. Look beyond the flower arrangements, the cherrywood counters, and the marble tiles of his American flagship, and you’ll find the truffles (caramel, almond, and Champagne infusions) that helped to earn him a featured spot in Oprah’s O magazine. All the chocolates are handmade in Brussels although Marcolini imports the beans from anywhere from Ecuador to Madagascar. If you can stop yourself from relishing some delicacy with a raspberry ganache at the self-service seating, you can take home a customized assortment of chocolates or a sampler like the World Flavors box, which features flavors from seven regions. Colorful marshmallow sticks and handpicked teas are also available.
