Founded in 1989, this dedicated pasta-maker moved in 2007 from Sullivan Street to its current location in Long Island City. The factory in back produces pasta for a thriving wholesale business, preparing daily ravioli as well as tortellini, cavatelli and agnolotti with fresh ingredients and thoughtful care. The fillings are designed to match their flavored pockets; wild mushrooms and white truffles, for instance, are wrapped in a saffron pasta, while the double ricotta is encased in a parsley variety.
