To paraphrase Henry Ford, at Ruby et Violette, you can get any flavor of cookie you want—as long as it’s chocolate chunk. That’s not as limiting as it sounds: Ruby et Violette has built a business around moist-but-crisp-edged cookies, packed with semi-sweet or white chocolate chunks and enhanced with everything from crystallized ginger to pumpkin puree to tequila, creating more than 60 varieties. The shoebox-size storefront in Hell’s Kitchen has a shabby-chic feel, cluttered with silk flowers, bead-draped chandeliers. gilt-edged family photos, and a not-insubstantial collection of framed press clippings. Among the attention-grabbing beauties, a lemon-white chocolate chunk has a delicate, floral fragrance; cherry gets a sparkle from the tartness of the chewy dried fruits; and the dark espresso bean is intensity itself. Only a few of the flavorings, like rosewater and pineapple essence, distract from the cookie they’re meant to complement. If you want to throw all dietary caution to the wind, the shop richly reinvents the Chipwich, pairing their cookies with Il Laboratorio di Gelato ice cream.
