Owners Michael Yarmark and Emilia Valencia spent several years in California as devoted customers of Kermit Lynch’s store and avid readers of his newsletter. Like the famed American wine merchant, the husband-and-wife duo seeks out small French producers focused on regionally distinct flavors. Indeed, many bottles are imported by the master and inspiration himself. “In some circles,” says Yarmark of his Fort Greene shop, “we’re called Kermit Lynch East.” Italian labels, Californian vintages, German varietals: Wherever the source, Thirst’s emphasis remains on small and unusual vintners. Take the West Coast’s Edmunds St. John which proclaims on some labels: “bottled by thirsty pagans with big ideas.” The store itself is an architectural point of interest with its wedge shape and curvaceous racks of ecofriendly materials. A display case of corks mounted like butterflies celebrates picks that Yarmark and Valencia have particularly enjoyed since their move east. Since there are no tasting-note signs on the shelves, you’ll need to ask for those recommendations. Italian bitters and San Fran’s Old Potrero whisky are highlights amid the stock of hard liquor.
ExtraTastings are held every Saturday from 2 p.m. to 5 p.m. Free delivery is offered in the surrounding neighborhoods of Brooklyn and in much of Manhattan.
