Odds are good that the sesame-seed roll, crunchy bread stick, or saffron-hued semolina slice you’ve nibbled while waiting for your entrée at a Manhattan restaurant has come from this always-busy wholesale and retail bakery. Trio’s is not a warm and cozy Cupcake Café sort of place; it’s a place to buy, not linger. The workhorse shop (also known as the Giovanni Bakery) is all about volume production for their long-standing megaclients, which include many of the city’s largest hotels and eateries. But if you’re craving fresh pumpernickel rolls or Trio’s poppy-seed croissants or need some Irish soda bread or crusty round panera loaves for a big party, Trio is definitely worth the trek.
