David Bouley is trading in crème fraîche for whipped soy. The four-star chef is teaming up with celebrity nutritionist Oz Garcia to open a health-oriented restaurant in January steps from Lincoln Center (they already have one at the St. Regis in Anguilla). There will be a dining room, and a casual health lounge where high-antioxidant drinks will be offered with and without alcohol. “David makes drinks and sauces that help boost the immune system and taste amazing,’’ says Garcia, diet guru to Hilary Swank, Donna Karan, and Russell Simmons. The lobster dish will have pomegranate juice imported from Turkey; the wheat-germ oil will be from the Loire Valley.
