Jean-Georges Vongerichten is expanding his empire, taking over the former Lucy space in ABC Carpet & Home to open his first “green” restaurant, tentatively called ABC Simple. “We will be working a lot with the farmers, using heirloom vegetables,” says the chef. “Everything will be very fresh and straightforward, California style, like when Alice Waters opened Chez Panisse.” But there’s more to the plan than organic, locavore food: Architect Joel Sanders says the project will use renewable and recycled materials, and low-flow bathroom fixtures.
