“When I think about breakfast, I always think about my grandmother’s cinnamon rolls,” says Craft pastry chef Karen DeMasco. So when Craft’s Tom Colicchio opened ’Wichcraft, a gourmet-sandwich shop that also carries DeMasco’s exceptional sweets, Grandma’s brioche buns were a shoe-in. A relatively dainty relief from super-size food-court cinnabombs, DeMasco’s version is a modest masterpiece of lavishly buttery brioche, its swirls judiciously slicked with the perfect amount of cinnamon-brown-sugar goo, its top befittingly glazed with powdered sugar. Now when we think about breakfast, we’re thinking cinnamon rolls, too.
