During Sueños’s “Tour of Mexico,” which begins this week, chef-owner Sue Torres explores the food and flavors of eight Mexican regions, commencing with Puebla on August 24 and concluding with Oaxaca in October. Along the way, she’ll serve special weekly menus (and a $30 three-course prix fixe from 5 to 7 P.M.) featuring indigenous specialties—some taught to her on Mexican sojourns by the families of her kitchen staff (Señora Lima’s black-bean tamale, for instance), others by teacher and author Diana Kennedy (papadzules, or “food for the lords”).
