dish to celebrate the perfectionist, foie gras–shunning Charlie Trotter—whose long-awaited TWC restaurant is now slated for early 2006—and maybe gently nudge him into speeding it up a
bit ($650 per person;
at Café Gray).

The next evening, the perfectionist, foie gras–loving Keller cooks
a fabulous nine-course dinner for a lucky few at Per Se; a portion of
the $1,000-per-person take will benefit Memorial Sloan-Kettering Cancer Center.
