Farm to Thanksgiving Table

Now’s the time to order the bird. Who to call to reserve your heritage-breed Bourbon Red, Eastern Wild, or locally raised Broad Breasted White.

1. Dickson’s Farmstand Meats

The birds: Broad Breasted Whites ($4.99/lb.) barn-raised on Amish farms in Lancaster, Pennsylvania, without the use of hormones or prophylactic antibiotics and shipped live to Madani Halal, the Ozone Park slaughterhouse. For the enlightened (unsqueamish) carnivore, Jake Dickson is offering guided tours of the facility on November 7 and 14.

2. Stone Barns Center
630 Bedford Rd., Pocantico Hills, N.Y.
The birds: Heritage-breed Bourbon Reds ($6.50/lb.) or Broad Breasted Whites ($4.25/lb.) that have lived as good a life as any domesticated turkey ever has, hobnobbing about the estate and feeding on a veritable all-you-can-eat buffet of grass, insects, and acorns.
To order: Call 914-366-6200, ext. 110, beginning October 18 (members can preorder); $40 deposit required. Pick up at the center on November 23.

3. Norwich Meadows Farm
Norwich, N.Y.
The birds: Health-crazed Broad Breasted Whites ($6/lb.) raised on a strict diet of certified organic feed and organic greens.
To order: Go to norwichmeadowsfarm.com or call 607-336-7598; $30 deposit required. Pick up at Union Square Greenmarket stand on November 22 or 24. (Limited supply available at Marlow & Daughters in Williamsburg.)

4. Quattro’s Game Farm
Pleasant Valley, N.Y.
The birds: Heritage-breed Bourbon Reds ($8.59/lb.), Broad Breasted Whites ($3.99/lb.), and so-called “farm-raised wild” turkeys (they’re kept under massive circus-tent-like netting; $7.49/lb.), all reared under the supervision of octogenarian owner Carmela Quattrociocchi on “plenty of grass” and organically grown corn and oats.

5. Heritage Foods USA
The birds: Several pedigreed Norman Rockwell–esque varieties including Narragansett, Spanish Black, Standard Bronze, and Bourbon Red (from $74 to $114, depending on weight), meticulously raised on small Kansas farms. If you request a specific breed, they’ll do their best to accommodate you. New this year: kosher heritage turkeys.

6. Uphill Farm
Clinton Corners, NY
The birds: Heritage-breed Bourbon Reds and Broad Breasted Bronzes in the 15-25 pound range are $6 a pound from this Greenmarket newcomer.

7. DiPaola Turkey Farm
Hamilton Township, NJ
The birds: Contented soy-and-corn-fed Broad Breasted Whites ($3.39/lb.) raised on this second-generation New Jersey turkey farm. To order: Visit several Greenmarket locations including Union Square Greenmarket on Wednesdays and Fridays, or call 609-587-9311. Pick up at the farm’s Union Square stand on November 24.
