Splurge: Surfing in Hawaii

You’ve mastered the waves at Montauk. Are you ready to tackle the really big ones? Splurge: Jamaican Grottoes
The Caves is a ten-cottage seaside resort just outside Negril. The actual grottoes have been put to use for guests: One has a hot tub; another is set for candlelit dining. Rooms are cozy and colorful. Some have outdoor showers; most have ocean views and terraces. And of course, there’s a spa and a swimming pool. Steal: Cabanas in Belize
Turtle Inn, Francis Ford Coppola’s resort in Belize, has just reopened. You’ll find seventeen beachfront cabanas, all with thatched roofs, outdoor showers, and Balinese-inspired interiors. Outside, laze on the sand or go saltwater fly-fishing, snorkeling, and scuba-diving along miles of barrier reef. Other highlights: the world’s only jaguar preserve and cruises up the Monkey River. FOR CITYHOLICS: PARIS
It’s a cliché for a reason: Paris in springtime is utterly heavenly. Yes, it rains, but take a cue from the movies and you might find yourself dancing in the drops.

FOR SOMETHING . . . BEYOND: Australian Wine Country
Getting to the Land Down Under takes a full day—and isn’t cheap—but foodies will find that the Barossa wine-making region is well worth the schlep. An hour north of Adelaide, this is the Napa Valley of Australia. Stay at one of two garden suites in the French-country-style Orangerie (rooms from $115; orangerie.com.au). FOR THE ADVENTUROUS:
Splurge: Camping in Tahiti
In Tahiti, you can kayak, snorkel, and scuba-dive around the second-largest atoll in the world in the morning and hike mountains all afternoon. Explorer’s Corner plans adventure trips year-round for those who’ll pay to rough it a bit (in most cases, this means sleeping in tents on pristine beaches and eating simple, freshly caught meals). Steal: Skiing in Chile
Skiing and snowboarding are not only possible south of the equator in our summer months but also cheaper than they are in the U.S. Chilean Andean Snow Adventures (CASA) organizes group and private tours of resorts in the Andes for all levels of skiers and riders. Splurge: Turkish Riviera
The Ada Hotel is a nineteenth-century Ottoman palace on Turkey’s Bodrum Peninsula (known to some as the Turkish Saint-Tropez). There are fourteen period-style rooms with carved four-poster beds and lanterns. The hotel has a private beach for fishing, sailing, or water-skiing; a boat is available for private cruises. Steal: Grenada Off-Season

FOR CITYHOLICS: VANCOUVER
Vancouver is popular with those who love the idea of skiing one day and windsurfing the next. But that’s not to say this charming, user-friendly city isn’t just as big on pampering.
