    Every time Catherine Deneuve is in town, Paris-trained Simon Sabag does her hair. Who can argue with that? Indeed, a trip to his salon is like leaving Manhattan behind for a very short, restorative trip to the seizième. His daily blow-dry regulars (including Jean Doumanian) often come with bodyguards—the jewelry, of course—but his blonde highlights, applied with a knife, are the work of an old master.
