These Collards are PERFECT!!!!! I am from the South and have had the my Roots based in Southern Cooking and I can tell you I've been making this specific recipe now for 2 years and the Collards are always a Hit at the Table. LOVE THIS RECEIPE!! It's the way collards should be fixed if you're from the south and not a Chef from the City.

I got a lot of raves for these greens when I made them for a family party the other day. I didn't cook them as long as the recipe called for, the greens were pretty tender after only 15-ish minutes. They would have been really soggy if I'd cooked them for the 45 minutes the recipe called for. If I were to do it again I'd probably cook the bacon for a little longer before putting the onions in.
