Having lived and worked in Paris for 4 years and worked in the kitchen of jacques cagna for a day as I wanted to learn how to make Quenelles de brochet I like the recipe very much and will try it soon. I do not like lavendar with anything it smells wonderful but the flavor does not suit a lot of people. I went to a lavendar fair in the south ofFrance and everything was made with lavendar- even the wine- can not tell you it was great. But taste it yourself. the rest of the recipe sounds great and works well... pjulny@aol.com
