Pizza is outstanding (if it's available); service needs serious work

Two visits: one great, one disappointing (and very brief). First: Three of us enjoyed three fantastic pies and a variety of antipasti on Co.'s second night open. The pizza was outstanding (and a great value). From the friendly hostess to our informed and attentive server, Co.'s service was excellent that night, too. Only disappointment: *many* items were sold out, including half of their red wines. Second: Two of us stopped by a week later (1/10) at 9:30, prepared to wait given the intense buzz. We were not prepared for a startlingly rude hostess duo who first told us that the wait would be 45 mins, revised that to 60 mins, and then reported that "the kitchen has run out of food. “You can wait if you want, but we won't have any food by the time you’re seated." Final words of advice: "you’re better off leaving now because we're totally slammed." Totally unprofessional, too. I’m hoping that Co. will be able to step up the service and kitchen operations, as the pizza is fantastic and could easily become a weekly habit for loyal neighbors (myself included).

Let the scene-sters wait on line for overpriced average pizza

Ok to good, but not nearly worth the hype. We got a Margherita pizza and the Popeye. The sauce on the marg was very good but there was not nearly enough of it (and not enough cheese either). The Popeye was very disappointing. It supposedly has 2 kinds of cheese plus garlic and pepper, in addition to spinach. There was a lot of spinach, which overwhelmed any other flavors, so I took off the spinach and what was underneath tasted just vaguely salty. They charge for bread, which I have no problem with. They also charge for olive oil, which is a stretch but I can live with. But they also charge for BUTTER ($2), which is insane and I'm pretty sure is the first time I've seen anywhere in the developed world. They said, "It's from Vermont." Hey, Vermont ain't that far away -- Land-o-lakes probably comes from Brazil. The service was fine, but I think their bartender is overwhelmed. It was crowded and I'm sure it will stay that way for a long time.

Bland and overpriced

My boyfriend and I asked the waiter how big the pies are and he very sternly said these are *individual* pies as in "I don't want you to share." While most places with individual pies tend to make them sound less sharable than they really are, this turned out to be a flat out lie at Co. We got two huge pizzas. The pizza itself was just OK. By the end of the meal it felt like I ate a lot of good bread. I was full, but not with a lot of flavors (and we started with a red cabbage / mushroom salad doused with balsamic vinegar). The ingredients were sparse and needed some salt (and this is coming from someone who loves bread and never adds extra salt to his food). Service was quick, but felt like a chain restaurant in Times Square with the servers eager for their 20% tips on overpriced food.

Nothing Special

A very attentive host, and server. We ordered the pork sausage and stracciatella pies. A very delicious crust, but else nothing super special. The edges were slightly charred, which wasn't so nice. The stracciatella was sparse with cheese, heavy on pink sauce, and a big heap of plain to droopy arugula on top. Not super flavorful. The pork sausage was quite spicy, pretty dry, lots of mushrooms. Our server raved about it, but I found it nothing to write home about. Maybe we should have ordered the popular meatball pie? Not sure what all the hype is about. Not very eager to rush back.

This place is great! Service is a little slow but its new and they will get the run of it. I went 2x and one night they were out of dough, but seems like they have worked out those kinks. Its not your typical pizza that served on every friggin corner in NY. But its damn tasty. If you want your giant craptastic slice I suggest moving on down the street.

Having been to Di Fara, Keste and Motorino this is my #1 pizza in NYC, light flavorful but charred crusts, with the right chew, perfectly balanced between the sauce and the unique combination of toppings.

Not your classic NY pizza

The moment you bite into the pie, you'll notice that it's not your classic NY pizza. The crunchy yet chewy crust is enhanced with just enough amount of creative flavorful toppings. If you are looking for a crust with good backbone, your search is over. A great place to go with 4 or more people and try all pies on the menu.

We were the 3rd table on opening night. The pizza is amazing. This puts pizza in another dimension. The special pizza blew my mind. The pizza with spinach was killer. The dough was perfect, thin, just the right amount of burnt crust. He mixes flavors which creates a pizza from another planet. Service was wonderful. The Ribolita soup was delicious. However, I wish there was more of it. Can't wait to go back.

I live within a block of Co. and go there to eat at least twice a week, alone to grab a bite or with friends. Co. has the best bread in the city and more interesting and delicious offerings than any average pizza place I know. The Straticella is addictive and the Birds Nest (with truffles) particularly good. The salads are light and lovely. Everything is portioned for individuals or to share with two, so it's a question of quality over quantity. The wait staff have been unfailingly nice to me every time I've been there. My neighbor just went for her birthday and had a wonderful experience too. The negative reviews on this thread are baffling to me.

Great pizza deserves better wine!

The pizza here is outstanding -if you are a gourmet pizza enthusiast, this is well worth trying. The dough is amazing and the toppings are first quality. As good or better than in Italy! However, the wine list is terrible. Only screw top bottles and very few from Italy. Not that I have anything against screw top bottles, in fact they are very practical, but the wine choices are too limited. Both times we have gone to Co., our delicious pizza was negated by the mediocre wines by the glass (and it is a good thing we didn't buy an entire bottle). Even spoke to the manager about the poor wine list, to no avail. Oh well - but the pizza is truly outstanding.
