    Compared with the elaborate constructions at Nicholas Morgenstern’s eponymous Lower East Side ice-cream parlor, the brownie sundae he devised for his East Village pizzeria GG’s seems like child’s play: vanilla ice cream, chocolate sauce, and an ooey-gooey brownie. But look closer. The whipped cream is hand-shaken and incredibly smooth, the candied cherry an artisanal Italian specimen, and the sauce more like ganache than your basic hot fudge. The highlight, though, is that brownie, which is short on flour and long on egg, intentionally underbaked, and brûléed à la minute.
