Kale Caesar Salad

Chopped kale


Shaved Parmesan

Anchovy Dressing

4 garlic cloves, minced

Pinch salt

2 tbs. Dijon mustard

½ cup grated Parmesan

1½ tbs. finely chopped anchovies

½ cup red-wine vinegar

2 tsp. lemon juice

2 egg yolks

2 cups extra-virgin olive oil


Mix the first 8 dressing ingredients together, then gradually whisk in the olive oil until emulsified. Add shaved Parmesan and croutons to the kale, and toss with the dressing. (Published 2014)
