Sushi fanatics know Tim Cushman from O Ya in Boston and New York, but for this restaurant the chef has drawn his inspiration from the other side of the Pacific. It’s all about California cuisine here, with its Mediterranean and multi-cultural influences. Take the dashi pickles on the cheeseburger or the Hungarian fry bread topped with smoked salmon and “ranch” kefir, not exactly your dad’s smoked salmon flatbread. No need to worry.
