The great fusion chef Nobu Matsuhisa has done enough innovating to span several culinary lifetimes, and, more than most things cooked up during the ‘90s, his miso-marinated black cod, rock shrimp with spicy mayonnaise, and tuna tartare with a bed of crushed avocado all have stood the test of time. Even the original restaurant is now gone, and with all the Nobu outlets scattered around the globe, it’s become clear that franchising has its costs.
