There are a thousand steakhouses in the naked city, and over the years, the venerable ones have developed their particular specialties. In our humble, highly subjective opinion, the signature prime sirloin at the Cetta brothers’ midtown joint is the best example of New York strip in the town, and one of the best cuts of beef in the city. The dining room has needed a face-lift for years, and is an increasingly impersonal, clamorous space, so for the best results, order it at the bar before the dinner rush, preferably while watching the first pitches of the Yankees game. Call for the creamed spinach, a goblet of inky red wine from the restaurant’s impressive cellar, and a crispy potato dish or two, and you’ll feel the rumbling, beefeater ghosts of the city — from Paulie Castellano down to the great Diamond Jim Brady himself — rising up all around you.
