Serves eight.

8 baby bok choy
2 tablespoons butter, melted

Cooking Instructions
Poach the baby bok choy for 2 minutes in a large saucepan of boiling salted water.  Strain; when the bok choy are cool enough to handle, cut them in half and press out any excess water. Place the halves on a baking sheet and brush with butter. Just before serving reheat in a 400° oven for about 2 minutes.
