Nancy Olson was named Pastry Chef of Gramercy Tavern in August 2006. Prior to joining the staff at GT, Nancy served as Pastry Chef of a number of New York City restaurants including Dona (2006), Peacock Alley at the Waldorf Astoria (2005-2006), Django and Theo. From 2000 to 2002, Nancy worked at Aureole, first as part of her externship while attending the Culinary Institute of America and then for two years as the pastry sous chef. Raised on a farm, Nancy creates mouth-watering pastries rooted in her childhood: she uses farm-fresh, seasonal ingredients as the inspiration for her simultaneously soulful, homey and elegant confections, which pair beautifully with Chef Michael Anthony's farm-inspired savory menu.
